Pomegranate and Pistachios bark

Seasonal, deliscious and packed with healthy flavonoids and antioxidants and also sugar free.



Recipe:


100g of 70% dark chocolate bar 100g of 85% dark chocolate bar 60g of unsalted melted butter 1/4 cup brown Erythirol 1/4 cup pomegranate seeds 1/4 roasted, crushed salted pistachios


Method:


Melt the chocolate with the butter( for dairy free use coconut oil but only 50g) in Ban- Marie. Mix the Erythirol and whisk it very well to remove all lumps. Add it into a squared silicone tray. Then sprinkle it with the pomegranate and pistachios. Press it down a little with a spatula or with a sheet of parchment paper so it incorporates inside the bark.

Freeze it for about 1 hr. Then cut it into barks and keep it in the freezer.


Tips:

You can make the barks thinner or thicker depending on your preference. I like them quite creamy so I leave them thicker and also because they fit on my freezer shelves . For a thinner version simply use a larger rectangular tray. You can replace Erythirol with maple syrup or date syrup(not low carb if you are watching your carb intake).
